Recipe: Roasted Artichokes

One of our favorite souvenirs to pick up while traveling is delicious recipes because they are something you can keep using—they don't break, they don't get too small, and they take up no space in a suitcase. So here is a simple but delicious recipe we picked up in Rome this week for roasted artichokes, a perfect summer dish you can bake or grill for your next soiree. They certainly are a food that impresses! 



Slice off the top quarter of the artichoke with a sharp knife. 

Cut the stem of the artichoke right at the base. Tuck a few peeled garlic cloves between the artichoke leaves—this adds is much flavor!

Sprinkle with a pinch of salt, then squeeze some lemon juice (about a teaspoon), and drizzle olive oil over the top (1-2 tablespoons is good but a little more is even better). Wrap up each artichoke in tin foil drizzled with a bit of olive oil. 

Place wrapped artichokes in a pan and roast in a preheated 415° oven for 60-75 minutes.  Check after 60 minutes. 

Remove from oven and allow the artichokes to cool for about five minutes before handling. Peel and enjoy!
