Recipe: Gorgonzola Pear Flatbreads

I combined a few recipes to achieve this perfectly delightful flatbread, which made its debut at my friend McKenzie’s baby shower. Easy, unique, and super tasty, my three requirements for party recipes :)


Foxy's Gorgonzola Pear Flatbreads
Recipe makes: 4 flatbreads
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:
4 small pieces of flatbread or naan bread (I used the Stonefire naan from Costco)
2-3 pears
1/2 cup of walnuts
3/4 cup of gorgonzola cheese
A couple handfuls of spinach
Splash of balsamic vinegar
Splash of olive oil

  1. Preheat oven to 350 degrees.
  2. Heat skillet on medium and add oil to cover the pan. Cut up the pears into small chunks and add to skillet. Splash some balsamic vinegar on them. Cook for about 3-4 minutes.
  3. Divide the pear chunks between the four flatbreads. 
  4. Sprinkle cheese and walnuts evenly on top, dividing the amount between the 4 flatbreads. 
  5. Place spinach leaves on top. 
  6. Cook in over for 7-10 minutes, until edges are just golden brown and cheese is melted. 

 Party Notes:


 These went about one or two per person.
